Let’s start the year with a light and refreshing #mandarin #sorbet to give us a boost before diving into 2022’s challenges and joys 😊!

Here’s the #recipe our pastry chef Tine Valič created especially for us.

The process is as follows:

1. Weigh the mandarin juice, water and lemon juice.

2. Premix all the liquid ingredients.

3. Weigh the solid ingredients: sucrose, dextrose, glucose powder 32DE, inline, maltodextrin 18DE and Neutro 5 Fruit.

4. Premix all the solid ingredients.

5. Add all the solid ingredients and the mandarin zest to the mixture of liquid ingredients. Mix first with a wire whisk, then with a blender for 2–3 minutes.

6. Pour the mixture into the batch freezer.

7. Select the Valmar Sorbet program, and start the freezing process by pressing the START CYCLE button (blue).

8. After the sound signal, the sorbet is ready for extraction.

9. Press the extraction button on the display, open the plastic door and proceed with the extraction of mandarin sorbet.

10. Pass in the blast chiller for 5–10 minutes and then keep it in the showcase at about -15°C.

11. If desired, decorate with slices of fresh mandarin.

This time, we used our MULTY VP 7 TTi machine.

You can also try it with the SMARTY TTi, Snowy TTi, MULTY P TTi, MULTY HP TTi or EASY TTi machines.

With a pinch of creativity, our Gelato & Pastry chef Martin Gregori, pastry chef Tine Valič and Chef Uroš Fakuč, recipient of one Michelin star, used just some of the wide range of Valmar machines to create their gelato inspirations each month throughout 2021.

To celebrate these festive days, Slovenian chef Uroš Fakuč, the recipient of one Michelin star, prepared for us a delicious combination of potica gelato, accompanied by traditional potica cake.

Here is the recipe!

The process is as follows:

1. Weigh the milk, cream and egg yolks.

2. Premix the liquid ingredients.

3. Weigh the solid ingredients: sucrose, skimmed milk powder, dextrose, maltodextrin 18DE, and neutral stabiliser Neutro five.

4. Premix all the solid ingredients.

5. Pour all the solid ingredients into the liquid mix. Mix first with a wire whisk, then with the blender for 2–3 minutes.

6. Pour the mixture into the kettle. Select program n.55.

7. Press the START CYCLE button (red) to start the heating process.

8. After the sound signal, open the valve and extract the mixture into a carafe. Add the walnut paste and rum and emulsify with the blender for 3 minutes.

9. Select the Gelato Valmar program and start the freezing process by pressing the START CYCLE button (blue).

10. After the sound signal, the luxurious potica gelato is ready for extraction.

11. Press the extraction button on the display, open the plastic door and proceed with the extraction of freshly made aromatic potica gelato.

12. During extraction, top with raisins soaked in rum and ground walnuts.

13. Pass the gelato pan containing the potica gelato in the blast chiller for 5–10 minutes and then keep it in the showcase at about -15°C.

14. Decorate with raisins and walnuts.

This time, why not try the explosion of festive flavours in a gelato version?

Michelin Chef Uroš Fakuč has served it with a walnut cream and potica pieces and used Valmar’s EASY 3 TTi Hot & Cool machine to prepare our December Favourite.

The ingredients are adjusted for bigger Valmar machines.

You can also try it with the SMARTY TTi, MULTY P TTi or MULTY VP TTi machines.

Potica is the most famous Slovenian traditional dessert and the delicious queen of festive days.

It is made from folded and rolled out yeast dough and filled with various fillings.

We know of more than 80 different fillings placed in the leavened dough, the most traditional and common is walnuts with or without raisins.

But potica can be also filled with hazelnuts, tarragon and cottage cheese, poppy seeds and other fillings.

Potica is traditionally baked in a ring-shaped ceramic pot named “potičnik” or “potičnica”.

The name potica comes from “povitica” which means “rolled up”.

To celebrate these festive days, Slovenian chef Uroš Fakuč, the recipient of one Michelin star, prepared for us a delicious combination of potica gelato, accompanied by traditional potica cake.
