We are excited to share with you some details of the preparation process of our September Favourite #gianduia #gelato, prepared with Valmar's innovative multipurpose combined MULTY P TTi machine that includes also the cutting-edge patented #Valmar COMBISYSTEM – a unique and innovative batch-freezing system that comes as standard in all batch freezers of the TTi series.

VALMAR COMBISYSTEM & COOLING

New Valmar COMBISYSTEM technological improvements have been integrated into the new MULTY P TTi cooling and batch-freezing systems.

The easily customisable software has been implemented into all the cooling procedures that differ from the gelato-making process so now confectionery, pastry, gelato and food service products are cooled according to their specific requirements.

Our September Favourite #gianduia #Gelato was also prepared with Valmar's innovative MULTY P TTi single-unit machine.

These multipurpose combined units are able to meet the most demanding and complex requirements of the food sector.

MULTY P TTi is a single-unit machine made up of two independently and separately operating tanks. The upper one heats and cooks up to 125°C, while the lower one cooks and freezes.

The innovative process makes it possible to quickly heat even small mix quantities – up to 20% of maximum capacity – without the product in progress burning or sticking.

Fine texture accuracy in production and no thermal inertia are guaranteed, even with products made of very delicate ingredients such as pastry cream.

During each cycle of the gelato making process only the mix to be batch frozen is heated, as required by the flavour-by-flavour process. This results in quality improvement and a higher degree of customisation of the gelato produced.

Although we’re still enjoying hot summer days, colourful autumn is just around the corner.

This time our pastry chef Tine Valič found the inspiration for our September Favourite in one of the most treasured autumn treats to create that smooth flavour that always pleases our palates and warms up our mood 😊.

The process is as follows:


1. Weigh the milk, cream and invert sugar.
2. Premix all the liquid ingredients (above).
3. Weigh the solid ingredients: sucrose, skimmed milk powder, dextrose, glucose powder 32DE, maltodextrin, cocao and neutral stabiliser Neutro 5.
4. Premix all the solid ingredients.
5. Pour all the solid ingredients into the liquid mixture. Mix first with a wire whisk, then with the blender for 2–3 minutes.
6. Pour the mixture into the kettle. Select program n.51 in the dedicated chocolate menu.
7. Press the START CYCLE button (red) to start the heating process.
8. After the sound signal, open the valve and extract the mixture into a carafe. Add the dark chocolate 54% and hazelnut paste 100% and emulsify with the blender for 3 minutes.
9. Pour the mixture into the machine.
10. Select the Gelato Valmar program, and start the freezing process by pressing the START CYCLE button (blue).
11. After the sound signal, your artisanal gianduia gelato is ready for extraction.
12. Press the extraction button on the display, open the plastic door and proceed with the extraction of your artisanal gianduia gelato.
13. Pass in the blast chiller for 5–10 minutes and then keep it in the showcase at about -15°C.
14. Decorate with hazelnuts and chocolate decoration.


This time, we used our MULTY P 7 TTt machine.

You can also try it with the Multy HP TTi, Multy VP TTi, Smarty TTi or Multy P Dual TTi.
