It’s designed for bigger production of artisanal gelato, with a specific production process, and is the perfect solution for industrial and artisan premises.
The basic line is composed from three machines: a mix heater, a homogeniser and a mix cooler.

Colourful (and slightly cooler ) #autumn with its bountiful harvest inspired our Master Gelato & Pastry Chef Martin Gregori to prepare a slightly different #artisanal #gelato flavour. And not only one, but two of them: a sweet version, and one with a savoury twist.
Ready to try it ;)? Here is the #recipe!

The process is as follows:

1. Weigh the milk and pumpkin pulp.

2. Weigh the solid ingredients: sucrose, dextrose, dry glucose 32DE, and neutral stabilizer neutro 5.

3. Premix all the solid ingredients.

4. Pour all the solid ingredients into the milk and pumpkin pulp. Mix first with a wire whisk, then with the blender for 2–3 minutes.

5. Pour the mixture into the kettle. Select the program for ice cream mixture to 65°C. Press the button START CYCLE (red) to start the heating process.

6. After the sound signal, open the valve and send the ice cream mixture in the batch freezer. Close the valve.

7. Select the program Valmar Ice Cream (Medium Quantity) and start the freezing process by pressing the button START CYCLE (blue).

8. After the sound signal, the pumpkin artisanal gelato is ready for extraction.

9. Press the extraction button on the display, open the plastic door and proceed with the extraction of your pumpkin artisanal gelato.

10. During the extraction, sprinkle crumbled amaretti biscuits OR salted pumpkin seeds.

11. Pass in the blast chiller for 5–10 minutes and then keep it in the showcase at about -15°C.

12. Decorate with: diced candied pumpkin and whole amaretti biscuits OR salted pumpkin seeds.

We used our Snowy TTi machine to prepare the pumpkin gelato. But you can also try it with the Smarty TTi, Multy P TTi or Multy P Dual TTi.
