Universal, electronic cream cooker Chef Cream TTi series supports the production of a wide range of products.

The key characteristic is its multifunctionality: it cooks, heats and pasteurizes the product. Enabling cooking temperatures up to 122˚C, this is the evolution of the classic cream cooker for all pastry making. It differs from other similar cream cookers on the market, because it uses software to control the heating and freezing process.

This month, our Pastry Chef Tine Valič chose for our favourite flavour one of the classic Italian flavours, inspired by one of the most popular Italian desserts.

The Italian name tiramisu is often translated figuratively as “pick me up” or “cheer me up”, referring to the effects of the sugar and espresso.

We hope that, in these still chilly winter days, a cup of our tiramisu artisanal gelato will be just the thing to “cheer you up”. 🧁🍦🍨 🙂

The process is as follows:

1. Weigh the milk, egg yolks, espresso coffee, marsala and mascarpone.
2. Weigh the solid ingredients: sucrose, skimmed milk powder, dextrose, maltodextrin 18DE, and neutral stabiliser neutro 5.
3. Premix all the solid ingredients.
4. Pour the solid ingredients into the milk. Mix first with a wire whisk, then with the blender for 2–3 minutes.
5. Pour the mixture into the kettle. Select program 55.
6. Press the START CYCLE button (red) to start the heating process.
7. Open the tap and press the Stirring key to pour the mixture into the cylinder and cool the mixture down.
8. Select the Gelato Valmar program, and start the freezing process by pressing the START CYCLE button (blue).
9. Press the extraction button on the display, open the plastic door and proceed with the extraction of gelato.
10. During the extraction, add crushed ladyfingers. Pass in the blast chiller for 5–10 minutes and then keep it in the showcase at about -15°C.
11. Decorate with ladyfingers and cacao powder.
