One of Valmar’s trump cards: the widest range of machines on the market

Our range offers a combination of machines dedicated to different production methods, providing solutions for various production concepts and with no production limits:

1. Traditional three-machine method: a pasteuriser SWEETY TTi, an ageing vat the SWEETY AGE TTi model, and a batch freezer, the SNOWY TTi model;

2. Classic two-machine method: a pasteuriser, the SWEETY TTi model, and a batch freezer, the SNOWY TTi model;

3. SMARTY Method: Combined and multifunctional machines: for ice creams, choose from the SMARTY TTi models.

4. Our best solution for medium production of artisanal gelato is comprised of the MULTY P TTi and SWEETY TTi machines, offering greater flexibility of production and allowing you to personalise your recipes and expand your range with new high-quality pastry and semifreddo products.

By offering 60l, 130l and 180l pasteurizer machines, which can be adapted to the diverse capacity of batch freezers, all the production methods described above can be customised according to how much pasteurizer mixture you need.

The process is as follows:

1. Mix the milk, cream and pear puree. Add the honey.

2. Add the premix of solid ingredients (sucrose, maltodextrine, dry glucose 32 DE, inulin, neutro stabiliser) to the liquid ingredients.

3. Mix first with a wire whisk, then with the blender for 2–3 minutes.

4. Pour the mixture into the kettle. Select the program: Heating to 85°C. Press the button START CYCLE button (red) to start the heating process.

5. After the sound signal, open the valve and send the gelato mixture into the batch freezer. Select the Gelato/Ice cream program by pressing the icon.

6. When the sorbet mixture is cold, select the Valmar Gelato/Ice cream program and start the freezing process by pressing the START CYCLE button (blue).

7. After the sound signal, the gelato is ready for extraction.

8. Press the extraction button on the display, open the plastic door and proceed with the extraction of your pear and honey gelato.

9. Make your pear and honey gelato truly special with home-made honey and walnut variegato topping: first drizzle the half the topping over the first layer as it is extracted into the tray, then drizzle the remainder over the top once the extraction is completed.

10. Pass in the blast chiller for 5 minutes and then keep it in the showcase at about -15°C.

This time, we used our Snowy TTi machine to prepare our October Favourite Pear and Honey Gelato with Walnut Topping.

You can also try it with the Smarty TTi, Multy P TTi or Multy P Dual TTi.

Summer is not over yet, but autumn is already on the horizon. We have really enjoyed these special summer days and to celebrate the not-too-distant end of official summertime, Valmar's Master Gelato & Pastry Chef Martin Gregori has prepared for us a sweet grape sorbet recipe to welcome colourful autumn.

The process is as follows:

1. Weigh the water, grape juice and invert sugar.

2. Weigh the solid ingredients: sucrose, dextrose, dry glucose 32DE, inulin and neutral stabilizer neutro 5.

3. Premix all the solid ingredients.

4. Pour the mixed solid ingredients into the water, juice and invert sugar. Mix first with a wire whisk, then with the blender for 2–3 minutes.

5. Pour the mixture into the kettle. Select the program for sorbet mixture to 65°C. Press the button START CYCLE (red) to start the heating process.

6. After the sound signal, open the valve and send the sorbet mixture into the batch freezer. Select the program Temporized Cooling Mixture and press the button START CYCLE (blue).

7. When the sorbet mixture is cold, select the program Valmar Sorbet and start the freezing process by pressing the button START CYCLE (blue).

8. After the sound signal, the sorbet is ready for extraction.

9. Press the extraction button on the display, open the plastic door and proceed with the extraction of your best grape sorbet.

10. Pass in the blast chiller for 5 minutes and then keep it in the showcase at about -15°C.

This time, we used our Snowy TTi machine to prepare our September favourite grape sorbet.
You can also try it with the Smarty Tti, Multy P TTi or Multy P Dual TTi.
