Our August #favourite was quite playful 🙂 and our Gelato & Pastry Chef Martin Gregori couldn’t convince his sixth scoop to stay on top of his Lemon Mint Sorbet tower.

But the challenge remains open ... until our next try 🙂 !

Valmar's Master Gelato & Pastry Chef Martin Gregori is delighted to share with you a refreshing summer Lemon Mint sorbet for hot August days.

The process is as follows:

1. Weigh the water and lemon juice.

2. Weigh the solid ingredients: sucrose, dry fructose, dextrose, dry glucose 32DE, inulin and neutral stabilizer neutro 5.

3. Premix all the solid ingredients.

4. Pour all the solid ingredients into the water, chop the mint leaves and mix first with a wire whisk, then with the blender for 2-3 minutes.

5. Pour the mixture into the kettle. Select the program for sorbet mixture to 65°C. Press the button START CYCLE (red) to start the heating process.

6. After the sound signal, open the valve and send the syrup in the batch freezer. Select the program Temporized Cooling Mixture and press the button START CYCLE (blue).

7. When the sorbet syrup is cold, add the lemon juice directly into the machine.

8. Select the program Valmar Sorbet and start the freezing process by pressing the button START CYCLE (blue).

9. After the sound signal, the sorbet is ready for extraction.

10. Press the extraction button on the display, open the plastic door and proceed with the extraction of your best Lemon Mint sorbet.

11. Pass in the blast chiller for 5-10 minutes and then keep it in the showcase at about -13°C.


This time, we used our Smarty TTi machine to prepare Lemon Mint sorbet.
You can also try it with the Multy P TTi or Multy P Dual TTi.

3. COMBISYSTEM is … Freezing performance

The patented Valmar COMBISYSTEM, which is a feature of all the machines in the TTi series, guarantees maximum control over the quality of the final product (gelato/sorbet/granita) from the beginning to the end of the production process, and excellent performance from the first to the final step.

Valmar software used in the Valmar COMBISYSTEM ensures the optimal structure of gelato/sorbet/granita throughout the production process, as well as when the final product is extracted. Product freezing is always under control.

The COMBISYSTEM
→ prevents the final product from being over-frozen,
→ guarantees a maximum quality of gelato in the extraction phase.

The COMBISYSTEM provides 3 options for gelato/sorbet/granita extraction for maximum control for maintaining the structure of the final product during extraction:
2 for classical gelato extraction: manual and time setting;

All our TTi machines (Smarty, Snowy, Multi P, Multi P Dual, Multi HP, Easy) have 6 programs for gelato and sorbet production – Valmar Gelato and Valmar Sorbet – where each program refers to a different quantity of gelato/sorbet (small, medium or maximum quantity).

All programs work on the Valmar #COMBISYSTEM principle.

Depending on which program you choose, your TTi machine will select the appropriate speed itself. Thanks to the Valmar COMBISYSTEM each program– identifies the stage of mass structure in the machine and adjusts the speed depending on certain parameters.

At one stage the product’s mass inflates, at another it decreases, but always in such a way that the end product has always the same quality characteristics in all 3 different quantities: the gelato/sorbet will always keep its appearance, texture and performance (creamy, airy, silkiness, dry).
