Awareness of the importance of human ties, the production of local, natural food, and the value of local providers and suppliers.

Process

1. Weigh the water and the peaches.

2. Weigh the solid ingredients: sucrose, dry fructose, dextrose, glucose syrup and neutral stabilizer neutro 5.

3. Premix all the solid ingredients.

4. Mix the peaches with a blender and add the lemon juice.

5. Pour all the solid ingredients into the water, and mix first with wire whisk, then with the blender for 2-3 minutes.

6. Pour the mixture into the kettle. Select the program for sorbet mixture to 65°C. Press the button START CYCLE(red) to start the heating process. After the sound signal, open the tap and pour the mixture into the carafe.

7. Add the peach puree and emulsify with the blender for 3 minutes.

8. Pour the mixture into the batch freezer select the program Valmar sorbet and start the freezing process by pressing the button START CYCLE (blue)
After the sound signal, the sorbet is ready for extraction.

9. Press the extraction button on the display, open the plastic door and proceed with the extraction of your best peach sorbet.

10. Pass in the blast chiller for 5-10 minutes and then keep it in the show case at about 13°C.

Valmar's Master Gelato & Pastry Chef Martin Gregori is delighted to share with you his famous Briška Cherry recipe for a truly delicious summer joy!

Process as follow:

1. Weigh the water.

2. Weigh the solid ingredients: sucrose, dry fructose, dextrose, glucose syrup and neutral stabilizer neutro 5.

3. Premix all the solid ingredients.

4. Pour all the solid ingredients in the water, and mix first with wire whisk, then with the blender for 2-3 minutes.

5. Pour the mixture into the kettle. Select the program dedicated for sorbet mixture to 65° and press the button START CYCLE (red) to start the heating process.
After the acoustic warning, open the tap and pour the mixture into the carafe.

6. Add the fruit puree and emulsify with the blender for 3 minutes.

7. Pour the mixture into the batch freezer select program Valmar Sorbet and start the freezing process by pressing the button START CYCLE (blue).
After the acoustic warning, the ice cream is ready for extraction.

8. Press the extraction button to the display, open the plastic door and proceed with the extraction of the your best sorbet with Briška cherry.

9. Pass in the blast chiller for 5-10 minutes and then keep it in the showcase at about 12.5°C.

This time, we used our Multy P TTi machine to prepare Briška Cherry sorbet.
You can also try with Smarty TTi.

Spring is also the start of the gelato season.
This year’s Spring was very unique, in many senses, it changed our routines.

Many of our favourite gelato makers did their best to provide us with fresh gelato even in new, challenging circumstances, to brighten up our days by bringing us a bit of happiness, normality and optimism.

We want to thank all passionate and dedicated gelato makers who are bringing happiness and delight into our lives daily.
